Bio Erythritol (don't confuse with the artificial/ synthetic erythritol!)

There have been many articles recently about possible problems of erythritol, but they refer to the synthetic erythritol. Here is the difference in process:

 

Synthetic erythritol is produced through a multi-step process that involves chemical reactions and fermentation. Here's an overview of the steps involved in the production of synthetic erythritol:

  1. Starting Material Selection: The primary starting material for synthetic erythritol production is glucose, which can be derived from various sources like cornstarch or other carbohydrates. Cornstarch is a commonly used source due to its availability and relatively low cost.
  2. Glucose Isomerization: Glucose is isomerized, meaning its molecular structure is rearranged, to form another sugar called glucose isomerase. This isomerase converts a portion of glucose into another sugar called "xylose."

THE MOST IMPORTANT INGREDIENT!

If you have ever tried to prepare a delicious low-carb and gluten-free meal with no gums, no glues, no starches resistant or not, no eggs even, then you know how challenging this task can be! 


We started the company right before Covid paralyzed the world and had to create and test with almost no income or financing available all these products! Rossi sold her only home to support the process, because she saw how the products were changing people's lives and she put in them all the love she had and more, she put her heart in them! She started making the biscuits first with a Mexican tortilla press and she was cutting the biscuits one by one by hand! Imagine hundreds of biscuits pressed and cut one by one, just to ensure the proper carbohydrate count so that kids don't get a seizure from having half of a gram of carbohydrate more!  She was even playing Tibetan healing music to additionally infuse them with healing powers! The staff thought she was going mental! But she was not! She was determined to create products that were about to change the world of insulin resistance and epilepsy for kids and adults! She knew firsthand what was at stake, as she was suffering from so many food-related problems for a long time! 


We still make the cookies by hand, although now the process is a bit different because she basically re-purposed most of the kitchen gadgets to perform duties they were not intended for. It's like Willy Wonka's house of kitchen utensils in our small production facility! She often tells a story: 'I hated growing up in my father's workshop, painting the machines at the age of 9, polishing the machines, doing all kinds of chores, I hated it especially when the kids outside were playing, and I had to work! And see now how handy this whole experience is when I need to think outside of the box and I have this thought process in my head that was nourished during that dreadful for me then time!' Everything happens for a reason!


Rossi has a favorite quote: 'Losses often are just the seed of investment that you needed for something bigger, but did not realize at the time!
