Erythritol, a popular sugar substitute, has gained significant attention due to its low-calorie content and diabetic-friendly nature. As consumers become more health-conscious and environmentally aware, two variants of erythritol have emerged in the market: bio erythritol and non-bio erythritol. These options cater to different preferences, taking into account not only health benefits but also sustainability and production practices.
Bio erythritol, often referred to as organic erythritol, is produced using a more eco-friendly and sustainable approach. It is derived from organic sources, usually from non-genetically modified (non-GMO) corn, and is cultivated without the use of synthetic pesticides, herbicides, or chemical fertilizers. The production of bio erythritol aligns with principles of organic farming, which emphasizes minimizing environmental impact and promoting biodiversity.
Key Features of Bio Erythritol:
1. Organic Certification: Bio erythritol is certified organic by regulatory bodies, ensuring that it meets strict standards for organic cultivation and processing.
2. Non-GMO: The corn used for bio erythritol production is non-GMO, appealing to consumers who prefer to avoid genetically modified organisms.
3. Sustainable Farming: Organic farming practices used in the production of bio erythritol promote soil health, reduce water pollution, and conserve biodiversity.
4. Minimal Chemical Exposure: The absence of synthetic pesticides and chemicals in cultivation contributes to a lower chemical load on the environment and the end product.
There have been many articles recently about possible problems of erythritol, but they refer to the synthetic erythritol. Here is the difference in process:
Synthetic erythritol is produced through a multi-step process that involves chemical reactions and fermentation. Here's an overview of the steps involved in the production of synthetic erythritol:
It's important to note that synthetic erythritol is chemically identical to naturally occurring erythritol, which can be found in small amounts in some fruits and fermented foods. However, the synthetic production process involves several chemical and enzymatic steps to achieve a higher concentration of erythritol for commercial use.
Allulose, also known as D-psicose, is a low-calorie monosaccharide sugar that has gained attention as a natural sweetener and sugar substitute. While it tastes and functions like sugar, allulose possesses some unique properties that set it apart.
Here are some key characteristics of allulose:
It's important to note that allulose is not metabolized in the same way as traditional sugars. The majority of ingested allulose is excreted through urine without being significantly absorbed by the body, which contributes to its low caloric content and minimal impact on blood sugar. Due to this unique metabolic pathway, allulose is generally well-tolerated and does not typically cause digestive discomfort that can sometimes be associated with other sugar alcohols.
Allulose is being used in a variety of products, including beverages, confectionery, baked goods, and dairy alternatives, as a way to reduce sugar content and calories while maintaining the sweetness and sensory characteristics of the final product. However, as with any food ingredient, individuals with specific dietary needs or concerns should consult with healthcare professionals before making significant changes to their diet.
Bio Erythritol isn't fully digested, ensuring it doesn't spike blood sugar. Overconsumption can lead to stomach discomfort. Allulose's digestion involves excretion via urine through the kidneys. These two natural sweeteners target different bodily areas, preventing discomfort and distributing the "weight" evenly for desired sweetness and great taste without aftertaste!
One of the most complex and cost-intensive aspects of our chocolate production lies in sourcing dehydrated coconut to replace the conventional dehydrated milk often associated with a high glycemic index, lactose intolerance and other downsides. A distinct advantage of coconut is its low glycemic index and its compatibility with individuals managing lactose intolerance. However, the contemporary challenge lies in procuring dehydrated coconut devoid of additives. It is noteworthy that numerous coconut flours and blends contain maltodextrin, employed for visual appeal preservation and cost-efficient manufacturing. Notably, while maltodextrin is categorized as a natural sugar alcohol, it retains a relatively high glycemic index.
Ensuring meticulous dehydration is paramount, as the absence thereof necessitates the use of lecithin to amalgamate water molecules with chocolate's fat molecules. Our reservations regarding lecithin are elaborated in the "ingredients we don't use" section. Addressing this intricate facet of the chocolate-making process compelled us to both locate and adapt specialized machinery. The arduous nature of this endeavor is a deterrent for larger corporations, given its substantial financial investment, labor-intensiveness, and time consumption. At Rossi's Pure USA, however, we firmly hold the conviction that the scrupulous attention and resources dedicated to this pursuit yield a substantial return. The discernible benefits to health and taste underscore our commitment to the product's integrity and quality.

We started the company right before Covid paralyzed the world and had to create and test with almost no income or financing available all these products! Rossi sold her only home to support the process, because she saw how the products were changing people's lives and she put in them all the love she had and more, she put her heart in them! She started making the biscuits first with a Mexican tortilla press and she was cutting the biscuits one by one by hand! Imagine hundreds of biscuits pressed and cut one by one, just to ensure the proper carbohydrate count so that kids don't get a seizure from having half of a gram of carbohydrate more! She was even playing Tibetan healing music to additionally infuse them with healing powers! The staff thought she was going mental! But she was not! She was determined to create products that were about to change the world of insulin resistance and epilepsy for kids and adults! She knew firsthand what was at stake, as she was suffering from so many food-related problems for a long time!
We still make the cookies by hand, although now the process is a bit different because she basically re-purposed most of the kitchen gadgets to perform duties they were not intended for. It's like Willy Wonka's house of kitchen utensils in our small production facility! She often tells a story: 'I hated growing up in my father's workshop, painting the machines at the age of 9, polishing the machines, doing all kinds of chores, I hated it especially when the kids outside were playing, and I had to work! And see now how handy this whole experience is when I need to think outside of the box and I have this thought process in my head that was nourished during that dreadful for me then time!' Everything happens for a reason!
Rossi has a favorite quote: 'Losses often are just the seed of investment that you needed for something bigger, but did not realize at the time! I now cherish all my losses, as they made me the person I am today and that reflects 100% in all my products! Every product has a piece of my heart, every single one of them! Thank God my heart grew so big thanks to all the clients who keep sending notes and pictures of how our products change their lives daily!'
Welcome! Check out my new announcement.
